SECOND GENERATION2. Martin Thomas Spaltro
(1) was born on 4 Oct 1911 in Viesta,
Prov of Foggia, Italy. He died on 13 May 1992 in Portland, Cumberland, Maine.
He was buried on 16 May 1992 in So. Portland, Cumberland, Maine. Martin Spaltro
grew up on Deer Street in Portland's Little Italy, and started in the restaurant
business as a young man. He cleared tables and washed dishes before eventually
gathering the experience necessary to be a chef. He specialized in Italian dishes.
Some of his recipes he learned from his mother. From 1932 until 1954 he was a
chef at the Roma Cafe, where the specialties were mixed grill, lobster thermidor,
filet mignon and Italian dishes. For 12 years around the 1950's he owned and
operated the Napoli, a seasonal restaurant, in Old Orchard Beach, Maine. Martin
worked five years at Boone's Restaurant on Custom House Wharf, and then at the
Pilots Grill in Bangor, Maine, before moving to California. He lived a short
time in Lompoc, California and worked as a chef at the Officers Club at Vandenberg,
AFB. He moved to Santa Barbara and became a chef at the exclusive El Encanto
Restaurant, where he prepared meals for Dorothy Malone, Pat O'Brien, Agnes Morehead,
Raymond Massey, Joseph Cotton and other film stars. He moved to Santa Ana, California
where he retired from working the Officers Club at El Torro Marine Base. While
working at El Toro he had occasions to prepare meals for Air Force One. He returned
to Portland, Maine 12 years ago. Martin's hobbies were fishing, coin collecting
and Civil War history.
